Easy Summer Grillin

Summer is in full swing and it’s time to break out the grill! Living in North Carolina it is way too hot to turn the oven on, so we try and grill outside every night.  Here are some awesome and easy “griller” ideas to help make your summer grilling as simple as possible.

Grilled Breakfast Pizza – This is so fun and so simple!

Grilled Breakfast Pizza

 

 

 

 

 

 

 

All You Need Is:

~3 3/4 cups of all-purpose flour
~1 tsp. table salt
~1 packet of yeast
~1/4 cup honey
~2 cups room temp water
~1/2 cup corn meal
~5 circle patties of breakfast sausage, chopped
~10 slices of turkey bacon, chopped
~3 large eggs
~2-3 cups of graded mozzarella cheese

All You Need To Do Is:

~Pre-heat grill to 450 F.

~In a food processor with two blades combine flour, salt and yeast, blend well. Then add 1/4 cup honey, blend well.

~Add 2 cups of room temp water slowly while flour mixture is blending. Blend all together until a ball of dough is formed.

~Remove the ball of dough from the food processor and place on a floured surface, work with your hands and let sit for 10 minutes.

~Sprinkle corn meal on top of your dough and add your mozzarella cheese, chopped sausage and bacon and crack your three eggs over the pizza.

~Sprinkle a little mozzarella cheese over the top of all your toppings and place on your pre-heated grill for 15 minutes.

~After your pizza has been on the grill for 15 minutes, turn grill up for 30-45 seconds to brown the top. Remove from the grill and let sit for 5 minutes before cutting and serving.

Wet Meat Rub – This rub can be used on any type of meat from chicken to beef

WEt Meat Rub

 

 

 

 

 

 

 

 

 

1 tsp Salt
1 tsp Paprika
1 tsp Rosemary
1/2 tsp Cayenne Pepper
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Ground Black Pepper
2 tbs Brown Sugar
1 tsp Honey
1/2 cup Yellow Mustard

Other Ingredients:

4 Boneless Skinless Chicken Breasts
8 slices of Peppered Thick Sliced Bacon

Instructions:
Pre-heat your grill to 350 degrees F. Mix all rub ingredients in a medium size bowl and put aside. Clean 4 boneless skinless chicken breasts. Lay the chicken breasts out on a sheet of foil and generously rub the chicken with the meat rub, repeat for both sides of the chicken. Wrap the rubbed chicken breasts with two slices of peppered thick sliced bacon. Put your rubbed, bacon wrapped chicken breasts on the grill; grill both sides for at least 9 minutes on each side. The cook time may vary depending on altitude. (Grill until the chicken is well done and inside temperature 165 degrees F.)

Lemon Zest Grilled Broccoli – I love to us this marinade on broccoli, but you can use any type of veggie you like.

Broccoli Marinade Ingredients:

1 tsp Paprika
1 tsp Parsley
1 tsp Tyme
1 tsp Garlic Powder
1 tsp Salt
1 tsp Ground Black Pepper
1 tsp Rosemary
1/2 cup Extra Virgin Olive Oil
Graded Lemon Zest

Other Ingredients:

2 heads of broccoli cut into sticks and cleaned

Instructions:
Mix all the broccoli marinade ingredients into a large freezer zip-lock bag. Add the broccoli to the marinade, close the bag and toss the broccoli in the bag to coat it thoroughly. Put the zip-lock bag in the refrigerator for 2 hours. After 2 hours in the refrigerator put the marinated broccoli onto a foil piece set out on the counter. Make sure the foil is cupped like a bowl to prevent any marinade from leaking out. Close the foil and poke several holes in the foil for ventilation, put your foil on the grill at 350 degrees F. with your chicken. Continue to check the broccoli stirring it around about every 5 minutes; total cook time 15-20 minutes. Remove the broccoli foil bowl from the grill and pour the broccoli with any juices onto a serving platter, and grate a desired amount of lemon zest on top. The cook time may vary depending on altitude

Serve your meal with 2 1/2 cups Fried Rice-A Roni and one Dinner Yeast Roll for each person. The frozen rolls will work just fine and only take 5 minutes to heat. This meal is simple and all ingredients used are straight from the pantry, refrigerator and freezer.

Summer grilling is so much fun and there are so many things you can grill up! The best thing you can do is to use your imagination…yes, you have to be creative and knowing you can grill almost anything is awesome!
